Savory Carrot Pudding

Ingredients
  • 2 cups cook carrots, mashed
  • 1 ½ cups grated parmesan cheese
  • 2 eggs, beaten
  • 1 cup dry saltine crackers (1 sleeve) or dry bread crumbs
  • 1 cup milk
  • Salt and pepper to taste
Instructions
  1. Pre-heat oven to 350º F.
  2. In a mixing bowl, combine all ingredients thoroughly and spread out evenly in a buttered 2-quart casserole dish. You can also use a ring mold.
  3. Bake for 1 hour in a pan of water. A sheet pan with a rim works well for this.
