Here is an easy and delicious mixed berry cobbler recipe that is great for a quick dessert during the week, or when you want/need something sweet in a hurry. If I’m correct this only takes about an hour from start to finish, and 45 minutes of that is baking time. Doesn’t get much easier than that.
Feel free to adapt this recipe to any berry combination or even solo berries and stone fruit. It is best served warm with vanilla ice cream on top.
Mixed Berry Cobbler

Ingredients
- One stick butter, melted
- 1 ½ cups baking mix such as Bisquick
- ¾ cup granulated sugar
- ½ tsp baking soda
- ⅔ cup milk or Half N Half
- 1 – ½ pint fresh raspberries
- 1 pint fresh blueberries
Instructions
- Preheat oven to 350º F.
- Pour melted butter into the bottom of an 8” or 9” square baking dish
- In a medium bowl whisk together baking mix, sugar, and baking soda, until well incorporated.
- Pour milk into flour mixture, whisk together until well combined.
- Pour into pan with melted butter and evenly distribute berries over the top.
- Bake for 45 minutes. Serve warm.
