Brown Sugar Cake with Apples

- ½ cup butter, softened
- 1 cup brown sugar, firmly packed
- 1 egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- ½ tsp baking powder
- ½ tsp salt
- ½ teaspoon cinnamon
- 2 apples - peeled, cored, and diced
- Preheat oven to 350ยบ F. Spray an 8" x 8" baking dish with non-stick spray, set aside.
- In a large bowl, cream together butter and sugar, add egg and vanilla, mix well to combine.
- In a medium sized bowl, whisk together flour, baking powder, salt, and cinnamon until well combined.
- Gradually mix together wet and dry ingredients. Fold in diced apples once combined.
- Spread batter into baking dish and bake 45 minutes or until golden brown and set. Cool and cut into squares.
