Brown Sugar Cake with Apples

Here we go again! It’s Fall and it’s apple season. Apple pies, apple breads, apple anything is all the rage right now because apples are at their best. In honor of that I went searching for something a little different. I mean, we all will most likely make an apple pie at some point in the next few months so I decided a quick bread or something like it would be a good idea. The end result is what I am going to share with you now … <drum roll> … a very moist and delicious apple cake that is studded with sweet apples.

Brown Sugar Cake with Apples

Ingredients
  • ½ cup butter, softened
  • 1 cup brown sugar, firmly packed
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ teaspoon cinnamon
  • 2 apples - peeled, cored, and diced
Instructions
  1. Preheat oven to 350º F. Spray an 8" x 8" baking dish with non-stick spray, set aside.
  2. In a large bowl, cream together butter and sugar, add egg and vanilla, mix well to combine.
  3. In a medium sized bowl, whisk together flour, baking powder, salt, and cinnamon until well combined.
  4. Gradually mix together wet and dry ingredients. Fold in diced apples once combined.
  5. Spread batter into baking dish and bake 45 minutes or until golden brown and set. Cool and cut into squares.
