Homemade Pomodoro Sauce

Below is a recipe for homemade pomodoro sauce; think of a very flavorful, rustic, simple marinara. This is great served with any type of red sauce pasta dish and even as a sauce for homemade pizza. Feel free to double the recipe and freeze some for later use, it freezes really well and will be ready for a quick meal when needed.

Ingredients
  • ½ cup extra-virgin olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, chopped
  • 2 (15-ounce) cans diced tomatoes
  • 2 (14.5 ounce) cans tomato sauce
  • Kosher salt and freshly ground black pepper
  • ¼ cup fresh basil leaves, torn into pieces
Instructions
  1. Heat the olive oil in a large saucepan over medium-low heat.
  2. Add the onion and garlic and cook until the vegetables are soft, 7-8 minutes.
  3. Carefully add the tomatoes and tomato sauce, season with salt and pepper.
  4. Cook until the sauce is thick, about 15 minutes. Taste and adjust seasoning with salt and pepper.
  5. Bring to a boil, stirring for a few minutes. Reduce the heat and let simmer for 20 to 25 minutes.
  6. Stir in the fresh basil and season again.
