Snickerdoodle Cookies

Snickerdoodle cookies are one of my all-time favorites, they SCREAM holidays … especially Christmas. I know they aren’t made just at Christmas but in our house that’s when the following recipe gets pulled out and that warm cinnamon smell fills the house. If you’ve never had one then you are truly missing out. Think of the ultimate cinnamon sugar cookie and that is a Snickerdoodle.

Snickerdoodle Cookies

Ingredients
  • 2¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp fine salt
  • ½ cup shortening, I used Butter-flavored Crisco
  • 1 stick unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1½ cups granulated sugar, plus 3 tbsp
  • 1 tbsp ground cinnamon
Instructions
  1. Preheat oven to 350º F.
  2. Sift or whisk flour, baking soda, and salt into a bowl.
  3. With a handheld or standing mixer, beat together shortening and butter until smooth. Add 1½ cups sugar and continue beating until light and fluffy, about 5 minutes.
  4. Add the eggs, 1 at a time, beating well after each addition. Add vanilla extract and beat until well combined. Add the flour mixture and blend until smooth.
  5. Mix the 3 tbsp sugar with the ground cinnamon in a small bowl.
  6. Roll the dough, by hand, into 1½-inch balls. Roll the balls in the cinnamon sugar and place evenly onto ungreased/unlined cookie sheets. Flatten the balls into ½-inch disks.
  7. Bake until light brown, but still moist in the center, about 12 minutes. Cool on a rack.
